Recipe: Liver Loving Super Salad

Image: Sven Scheuermeier In honour of Liver Health Month, and because spring is most definitely in the air in Victoria, I created a salad that's packed with all kinds of veggies, spices and herbs that are good for your liver.

Eat this for lunch a few times a week, or share it as a starter at dinner.

Liver Loving Super Salad



  • One handful baby kale
  • One handful spinach
  • 3 inches of cucumber, sliced
  • Handful of cherry tomatoes
  • One medium beet, grated
  • One large carrot, grated
  • Half an avocado
  • 1/3 cup Pumpkin Seeds
  • 1/3 cup Walnuts
  • 1 ounce goat's cheese


  • 1/3 cup extra virgin organic olive oil
  • Juice of one lemon
  • Juice of half a lime
  • 4 cloves of garlic, minced
  • 1 tsp turmeric
  • Salt & pepper to taste


Make dressing: combine all ingredients in a small jar, top, and shake vigorously. Add salt & pepper to taste.

Combine kale, spinach, cucumber and tomatoes. Toss with half the dressing.

Top with sliced avocado, grated carrot and beet, pumpkin seeds, nuts and goats cheese.

Add more dressing to taste.

Serves 1 for a meal, two as a starter.
